“今日有大量靚石蟹,特大的公石蟹每只都在300克以上,售120元一公斤,母石蟹現在肥美多膏,售80元一公斤,隔水蒸或姜蔥炒都一流!識貨的顧客一看到個大、肥美的石蟹就走不動了,剛有一個顧客自己就選購了近5公斤?!苯?,廣東臺山市臺城街道一經營海鮮生意的老板曾先生透露,石蟹雖比其他海蟹的經濟價值低,但它除了能獨自成菜之外,還常被作為提鮮食材用于烹飪各種美食。

據介紹,石蟹,又稱石頭蟹,是臺山海域較為常見的蟹類之一,喜歡棲息在巖石或沙礫底質的海域,捕食或逃脫時反應非常迅速。蟹螯粗大有力,蟹螯尖及內邊緣呈黑色,殼及爪按生長進程分別呈黃、綠、褐、藍、紫、紅等多種顏色,甲殼邊緣有明顯鋸齒,腹部光滑且多呈粉白或米白色。石蟹個頭越大,殼表顏色層次感越明顯,其中個頭大的公蟹顏色最為豐富,殼硬且易碎,肉質細膩、白嫩、鮮甜。

初春的臺山,海鮮市場的海鮮品種不算多,但近期石蟹上市的量比平時明顯增多,臺城街道富城市場銷售石蟹的海鮮檔已有六七家?!皠e看這些石蟹仔個頭不大,但肉質鮮嫩,殼薄且每只都是鮮活的,個頭偏大的一公斤都要賣70元以上,今天這些‘益街坊’特惠價賣40元一公斤?!?月27日的早市上,臺城街道富城市場一海鮮檔的老板娘招攬顧客時介紹,“石蟹仔很容易處理,輕輕揭開蟹殼后,摘除鰓部和腹部的‘臍蓋’,敲裂蟹鉗即可。買回去煮粥、粉、面都可以,煮咸湯圓特鮮甜,姜蔥炒會入味些,或直接原只隔水蒸熟,有時間可慢慢掰著吃”。

“除了原只蒸石蟹、姜蔥炒石蟹、石蟹蒸水蛋之外,我們師傅還嘗試借鑒瓦煲仔沙姜焗雞的做法,在烹飪后期放入處理好的石蟹,一起焗熟后,成品比較有特色,吃起來有雞肉自身的口感,還多了一層蟹的鮮甜味?!睆V海鎮一餐廳的負責人介紹,雞的品質是保證菜式出品的基礎,除了常見的白切雞、豉油雞、鹽焗雞之外,臺山人還會對搭配其他食材烹制出特色的田螺燜雞、山坑螺燜雞、沙白貝燜雞等情有獨鐘。

在臺山,用海鮮烹煮的咸湯圓,口感豐富且非常鮮美。它不僅是沿海居民冬至前后烹煮的應節美食,更是當地四季常見于早餐、宵夜及飯市的地道美味。市民平日會選購些食材烹之犒勞自己和家人?!跋氤韵虦珗A時,就直接去市場買些生蠔、海蝦、泥蟲、石蟹等回家烹煮,可用水蟹(臺山青蟹的一種)替代石蟹,兩者都有提鮮的作用?!痹趶V州從事專業技術服務業的“90后”臺山人伍先生說,每次回臺山都想吃一頓海鮮咸湯圓,料多、味鮮、湯甜是他對家鄉海鮮咸湯圓的舌尖記憶。
